We are on our way to Boston the week to visit our daughter, and thought we would try to make an SCD friendly version of baked beans. This recipe is adapted from the hillbilly housewife. I made a few changes to make it SCD friendly and reduce the quantity a bit. The original recipe can be found here http://www.hillbillyhousewife.com/category/recipes/beanrecipeshtm. Navy beans are allowed on the SCD diet and I needed to find a way to get more beans in my diet. I tend to eat too much salad, nuts, meat and cheese ( 9 month or older), Navy beans are a good way to help reduce acid to balance all the nuts in the diet.
- 2 cans of great northern beans ( navy beans)
- 1 teaspoon of salt
- 1 teaspoon of dry mustard
- 1/4 cup of Date molasses. ( I found mine at a Phoenicia bakery (Greek))
- 1/4 cup of honey
- medium size onion chopped
- 4-6 pieces of raw bacon ( I used 4)
Preheat the oven to 350°F. Open and rinse the beans. Put everything into a casserole dish, and stir well. Cover the dish with lid or aluminum foil. Let cook for 2 hours. Stir at about 1 hour. You may want to check a few minutes early to make certain the liquid has not all cooked out of the beans. When they are done they will look like the picture. These beans turned out to be really tasty, I hope you enjoy them.
